Here is a perfect, quick and healthy breakfast or snack that can be prepped in advance. Use whatever leftover veggies you have and make these. They are also great for the kids, especially when they start to enjoy finger foods, just be sure that your veggies are soft enough so that it is not a choking hazard.

For 12 quiche muffins;

  • 6-8 eggs
  • 1 cup full cream milk
  • 1 tsp baking powder
  • 2 cups mixed veggies of choice
  • 1/2 cup grated cheese (I used cheddar)
  • 1/2 cup feta cheese
  • Salt & pepper to taste
  • Spice with dry oregano, basil & parsley
  • Paprika & chili flakes (optional)

Usually I make six very plain and the other six I’ll make spicy with chili flakes and paprika. Spray the cupcake / muffin tin with cooking spray thoroughly (be sure that you spray it thoroughly so that it does not get stuck)… Bake for for 30-40 minutes at 180’c.
