Here is one of the snacks that really helped me to survive breastfeeding cravings. Especially in the beginning when you are hungry 100% of the time. It was and still is my nursing fuel. Regardless of that it is great to have these as a homemade snack that you can enjoy coming and going.

You will need;

  • 1 cup butter (soft)
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup full purpose flour
  • 1 cup nutty wheat flour
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 2 cups rolled oats
  • 1 cup chocolate chips (optional)

Directions;

With any cookie recipe you need to cream the butter and the sugar first. These cookies can also be guilt-free if you substitute the sugar with xilitol. Xilitol is the best option if you need a sugar substitute for baking. Add the eggs and the vanilla and mix well. Lastly you can add all the dry ingredients.

Use baking paper, it just makes life easier (especially now considering all the dishes during lock down). Place cookies on the baking tray whilst leaving space between the cookies. Bake at 180’c for 10-15 mins or until lightly browned. I did leave it in the oven for 18 minutes once and the end result was perfectly crisp.

Another tip that I can give you is to dust it with cinnamon before you place it into the oven.
