Mug cakes, single servings, a small cake in a cup, the real ‘cup-cake’. Call it whatever you would like, but basically your coffee mug that is oven friendly has other important purposes as well. Your tea cup that you never use will also work nicely. 

This was and still is great for lock down times. No unnecessary dishes or waste leftovers because you don’t sit with an entire cake that needs to be demolished before it goes bad. If you are anything like me, you can’t leave a cake until it is just not there anymore. So this recipe is really self-discipline thinking about it like that.

It’s a quick sweet treat, and you only get one.

You will need;

  • 60 g fat (I used butter)
  • 60 g sugar / honey
  • 1 egg
  • 45 g flour
  • 15 g cocoa
  • 1/2 tsp baking powder

Directions;

In a small bowl (again not making too much dirty dishes) just mix it all up. Divide the batter into two mugs and bake at 150’c for 20-30 minutes, depending on how you want it baked. I wanted chewy, so I only baked it for 20 minutes. Served best warm with a block of dark chocolate that will melt and a little bit of ice cream or custard. As is, is also more than delicious.
