I add a banana to these as it helps with the sweetness and then I compromise on the sugar. If you want these to be a 100% guilt-free snack you can really substitute the sugar with another sweetener or just add half a cup of sugar. Sugar obviously helps with the stickiness, but the banana help with that as well, so compromise on the sugar if you need these to be really good for you.

You will need;

  • 1 cup Sugar (or sugar substitute like honey or xilitol)
  • 1/2 cup canola oil
  • 2 eggs
  • 2 cups shredded carrots (or 2 medium to large carrots)
  • 1 mashed banana
  • 1/2 cup milk
  • 1 & 1/2 cup nutty wheat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup of mixed nuts (optional)

First mix the sugar, oil and eggs. Then add the shredded carrots, banana and milk. Combine these ingredients well. In another bowl mix the dry ingredients. When you add the dry ingredients be sure not to stir it too much, just until nicely combined.

Grease a muffin tin (12 muffins) and bake them for 20-25 minutes in a oven hotter than usual (200’c). Don’t bake them for too long in this hot oven. I put some mixed nuts on top before baking, but you can also add it into the mixture.

It’s a quick breakfast, a perfect 11 am snack and also a healthier dessert if you add a basic cheese frosting – carrot cupcakes.
