I had two almost ‘vrot’ bananas, a little bit of leftover cocoa, almost bad yogurt & leftover egg yolks from the meringues I made the day before. So ‘leftover’ flapjacks was the end result. I know it is popular these days to go the ‘low/less waste’ route, but I was raised in a home where my mom literally could not throw away anything. I am totally used to using every bit of everything. So try to remember next time you make meringues that you can do so many things with egg yolks. Don’t let the bananas you forgot about go without purpose and always use the leftover / almost off yogurt for baking.

What I used;

  • 2 mashed bananas
  • 3 egg yellows & 1 egg (2 eggs will also work fine)
  • 1/2 cup of full cream yogurt
  • 1 cup of flour
  • 1/2 cup of rolled oats
  • 1 cup of milk
  • 2 tsp of cocoa 

It is as easy as mixing it all up and there you go.

For the chocolate sauce I used;

  • 1 tbsp cocoa
  • 1 tbsp honey
  • 1 tbsp melted butter .
