When you are late on a Monday morning or when you need an urgent snack at 10 am before a long meeting these babies will be real life savers. Usually life savers like these are not all that yummy, but this recipe is just perfect for when you need to indulge on something healthy.

Use organic ingredients and enjoy these brilliant guilt-free snacks.

What you will need;

  • 1/3 cup coconut oil
  • 2 Tbsp honey
  • 4 Tbsp mixed seed and nut butter (Find out how to make your own nut butter here)
  • 2 cups rolled oats / OR 1 cup rolled oats & 1 cup of roasted granola cacao crunch
  • ½ tsp salt
  • ½ cup pecan nuts
  • Homemade chocolate coating (explained below)

Directions;

Melt together the coconut oil, honey and nut butter. Pulse and crush the oats with the salt until it is roughly mixed in a food processor or blender. Add the melted mixture to the oats and blend it until it is well combined. Lastly add the pecan nuts and pulse it only a few times so that you still have a few large chunks of pecans in you mixture.

Press it into a rectangle container that you can also freeze. Remember to press it according to the thickness that you would prefer. Place it in the freezer for 20 minutes.

If you would like a more chocolatey crunch you can always replace 1 cup of oats with 1 cup of roasted granola cacao crunch. I buy Tony Ferguson cocoa crunch which is just mixed seeds and nuts roasted in organic cacao. You can always roast mixed seeds and nuts with a quality cacao yourself if you would like to.

When replacing 1 cup of oats with cocoa crunch

For the chocolate coating;

melt coconut oil (3 Tbsp) with Nomu skinny (low-gi) hot chocolate powder (1 Tbsp). Nomu is really one of my favorite new products in the area. Buy their stuff online for better prices, but I do know that some Woolworths stores also have some of their products (Pretoria). This mention is totally free – I mention Nomu because it is what I really use and what I really like. If you don’t have a healthy / organic hot chocolate powder you can also do the following; melt coconut oil with honey (1 tsp) and organic rich cocoa (2-3 Tbsp).

Pour the chocolate coating over the mixture and freeze for another 10 minutes. Cut them into desired size pieces and also remember to leave a few extra ones in the freezer or fridge for those unplanned days. Enjoy!
